I just spent a delightful day learning how to cook some delicious Thai food in Chiang Mai at the wonderful Basil Cookery School!  It was a blast!  Boom taught us some of her family’s incredible recipes for noodle dishes, curries, papaya salad, mango sticky rice and more!

Oct 3rd – Zumba Fitness with Num in Bangkok!

Zumba Thailand!

Last night I went to a class with one of my favorite Zumba Instructors in BANGKOK, THAILAND!!!  It was so much fun!!  What a high energy, exciting, fun, happy class!  Thank you, Num!!  And his students are AMAZING!!  I met Num and his students when I was in Bangkok in June (with my mom!) and it was wonderful to see and dance with all of them again :)  I can’t wait to attend another class with him SOON!!!

Sept 28th

Beaches and pool and sun and fun!

What more can you ask for from a day in paradise?  Two kindles (oh, how did I live without one for so long?) and two beach buddies (aka Zack and Alena) hung out today – first at the jacuzzi pool (no, public health friends, I did not get in the pool) and then second at the beach in comfortable lounge chairs overlooking a calm and peaceful blue green sea.

And now it’s time to plan some more of this big adventure!  We have tickets on the night train – something I have always wanted to do!  Although it’s probably not quite as glamorous as I have made it out to be in my mind.  Now it’s just a matter of figuring out how to get to the other side of the island to catch a ferry to Don Sak, then get a ride from there to the train station just north of Surat Thani, without getting swindled.  Then we’re in Bangkok on October 2nd in the very early hours of the morning.

And I might just look for a Zumba class while I’m there to get a fix.  I tried to dance in the “workout room” aka room with an old tread mill and some random weights in kilos, but since it’s at the top of a hill everyone can see you and the people in the resturant and waitstaff were giving me funny looks.  Next time I’ll just invite them in for an impromptu Zumba class :P

Day 2 – Jet Lag

Good morning, Jet Lag!  Nice to see you at 3am…

As always is the case, jet lag is in full force this morning.  It was nearly impossible to keep my eyes open last night, but now after what felt like a full night’s sleep (finally), it’s now 4am and I’m wide awake.  I can’t even say it’s bright and early since it’s still dark outside.  At least I’ll be able to get one sunrise in during this trip.
